We have just released a limited amount of our Cascade Collection-Pro Series, Hand Forged, One of a kind, premium woods combined with locally made recycled paper @richlite. These 7” Chef utility shapes have perfect pinch grip balance & clearance for precision use of the heel of the blade, no more cramped grip from the handle being too close. We had these tested & used by professional chefs to get all the details & feedback needed. This is our best craftsmanship & pure pacific northwest inspired! 🌲

The wounds have closed on my hand and on my pointer finger and we have been able to finish up a few knives. They were mostly finished but needed the handles shaped & sculpted. We still have not been able to do any technical freehand knife grinding until the numbness & tingling hopefully subsides. Thanks for everyone’s patience through the holiday orders, we will keep chipping away at handle shaping as much as we can.

Life Happens… RED Friday
Know what you all may be thinking is that I cut myself with one of our stupid sharp knives, or the bandsaw bit me or maybe the evil buffing machine tried to plot my demise. Well, nope, none of the above happened.

Instead, this was from an off leash dog attack. An irresponsible dog owner in a public park who believed his ecollar remote was an acceptable replacement for a physical leash is the cause of this significant injury to my hand. The hands that I need to craft things with. ✋🏼

The HUNT

Grateful to be able to harvest my first Blacktail Buck with a bow this year. 🏹

Hunting has its many ups & downs with lots of miles under the feet to find game.

During a spot & stalk there is a conflict that plays out in your head to either be patient and let the animal move naturally or be aggressive and move smoothly, swiftly which then can jeopardize the progress. Sometimes you make a mistake and have to start over. This hunt was both.

Staying upwind after spotting a few blacktails an hour before sunset bedded down in a thicket/old orchard, I slowly made progress to get within bow range. Luckily I picked the side of the thicket that the buck would walk out of. Barely revealing himself like blacktails are known for, I patiently waited for him to get clear of the thicket for over 30mins and turn for a clean shot. It felt like hours…I could see his breathe in the cold crisp evening air, water dripping from his nose at 30 yards. He knew something was different but was not yet spooked by my silence. As soon as his chest cleared the thicket I drew from the ground, propped up on one knee and delivered the single lethal arrow to the vitals just behind the front shoulder. The buck ran approx 60 yards before falling over next to a lone birch tree. 🌲 Double lung, center of mass, rep after rep of shooting a bow brings you to these moments and when they happen all that training, preparation, gear, movement, navigation, glassing, doubt, success, adrenaline, depression all collide. The Hunt is now over. The real work begins to process the life of this animal. To honor its sacrifice by making sure every ounce of its meat is taken care of quickly and properly. During this time it really allows the Hunter to process all the moments leading up to this. Dreams then begin for next season, plans with longtime friends, family, traditions, new adventures, endless possibilities…

Grateful for the many generations of my family as hunters. This has been a much treasured gift passed down through the ages.

Texture?
As we look ahead into our fall designs we are trying to get a feel for what everyone likes and what we enjoy making. Texture has always been important to us on our forged blades as it shows the rawness of a piece of steel where it has evolved from. For our stainless models this texture has to be ground or filed in by hand for the details. It can give a similar feel but not the same as a true forged look. This Rossi model has evolved over time as our skills have and we could not be happier with how the texture transitions smoothly into the handle. When anyone picks this up and after feeling the balance the second thing they notice is how much more comfortable it feels than it looks. This always makes us smile!

They then can be easily picked up the following week, all wrapped up in a knife bouquet, sharp, edges polished & ready to finish summer strong and carry out into the hearty fall season. Few fun rehandles & restorations that we did between builds!

Always fun to take these sentimental pieces and give them new life and inspiration for the user.

One set was from their time in culinary school and the commercial plastic handles began to crack and degrade. It is always interesting to remove handles and find all kinds of interesting growth beneath them. As most mass produced handles are pressed, riveted or fastened together quickly for speed of assembly, the downside is there is no seal between the metal and handle material, allowing food, grease, etc to get trapped and grow between this thin space.

When we do our small batch builds, we make sure to seal this area with marine grade resin to prevent and food or moisture to get trapped in this area. It takes longer, has to have time to cure, but it is a better solution, especially for kitchen cutlery and other outdoor food processing shapes.

It is a small thing we do as a small Smithing business but comes from direct experience of repairing & rehandling hundreds of commercial cutlery pieces for our customers. It makes us better builders thinking ahead and wanting each piece to outlast us and be passed down through the family. Sometimes the most sustainable thing is to repair, rehandle or sharpen the cutlery you already have. Thank you for trusting us! 🇺🇸

Putting the craft in Handcrafted!

Here we are using a carbide file guard to hand file the transition area to the hidden tang. This allows for crisp clean lines for where the bolster area of the handle goes.

A few shapes waiting for the clay to dry before heat treating. This will help create the mystical hamon line during the finishing & polishing phase. We go for a forest design to honor the enchanting forests of the Cascade Mountains. 🏔️

Horizontal clay heat treating quench where only the end of the tang is left out of the oil during the heat treatment phase. Here steel goes from 1500 degrees to a few hundred degrees in seconds as cooled in the oil. 🔥

This is our hand forged Cascade Collection line where each knife is one of a kind with a Cascade mountain inspired jagged hamon and unique PNW inspired handle colors & materials! Black-Night Sky, Browns-Earth, Blue-Water, Green-Lush Forest

Spruce Tips Seasoning! 🌲🧂

We were inspired by an episode of Mind of a Chef featuring Chef @magnusfaviken adding spruce tips while grilling pork when camping! 🏕️

We locally foraged fresh young spring Spruce & Fir tips from here in the Pacific Northwest, chopped them up, food processing and dehydrated and combined with salt flakes! This reveals notes of citrus, spring pine, lemon notes and will go great with any seafood or meat grilling up this summer!

We will be giving a tin of these away with any cutlery purchase!

We have been having fun mixing it in with cold brew yerba mate teas, marinade/seasoning steaks and even with bourbon! 🥩 🥃

We hope it inspires many delicious seasonal summer meals!

Food Festival at Lake Union Park, WA
Event is free to attend and lots of free parking at this historic site next to @centerforwoodenboats & Museum of History & Industry on the water! 🌊 🛶

Here we are prepping for heat treatment of our Chinook Cutlery in Nitro-V stainless steel. Since they have to be at over 1900 degrees for 15-20 minutes during the austenitizing phase we wrap them in a stainless steep foil rated at 2200 degrees. This burrito wrap helps minimize the amount of oxygen in contact with the steel to mitigate decarburization.

The heat treating and tempering process is a 5-6 hour temperature and time formula that is different for each type of steel.

After plate quenching the stainless steel they then go back into the oven at a lower temperature for 2hour phases. While they are tempering we work on prepping handle materials. Here we are using a flat disc sander to add bevels to the front of the handle as this is an area that is hard to get to after the handle material is attached.

This model is inspired by the Shrike! We are excited to try @griptecofficial dark earth as our handle material. With a textured dark wash finish, paper micarta bolsters, and G-10 accents this outdoor model is looking fly.

Forging through the week!

Here we are working on hand forging to shape several Cascade Collection petty chef shapes. Each of these will be one of a kind directly inspired by the pacific northwest and in the 5-6” range. Creating a perfect size for all your kitchen prep needs!

We draw shapes with a marker on our anvil so that we can forge metal by pushing and pulling with each hammer blow to get it as close as possible to the shape we need. Forging tapers in the blade towards the tip and edge provide a well balanced blade and less time is then spent at the grinder grinding material away. There are so many ways and styles to craft knives nowadays but we honestly love the time spent at the anvil and sculpting the metal with skill, fire, hammers and continuous movement. This forging process really instills the basis for being a truly handcrafted item.

We also use soapstone along the spine and edge to check for straightness towards the end of the forging process. Too violent of a blow can leave too deep of an impression or bend the metal in the wrong area and will be spent chasing smoothing and straightening out.

Reducing the heat during the straightening, using a large square head hammer with soft blows helps even out the previous hammer blows and assists in straightening against the anvil.

Using the leg post vice at times to squeeze & straighten is a fun trick that can work for fine tuning and realigning the handle/tang area.

We love to use multiple hammers for the forging process. Three favorite are:
1. Swedish pattern 2.5pds square face cross peen with a 14” wood handle. This size, shape and length can really snap and generate a quick repetitive blow at the anvil.
2. My re-forged 5lb square and round hammer made from a vintage splitting maul with short handle.
3. Faram forge 2pd 12 ounce Cross peen hammer.

We have been trying something different this year. In the past we would go out near Crystal mountain each week for an adventure whether playing in snow up at the higher elevations or exploring below the snow line. This year we have been trying to visit different areas each week to get a refreshing perspective on all the diverse climates we have here in the Pacific Northwest. This last week we escaped the west side and headed over a couple snowy mountain passes to explore around the Apple Capitol of the World Wenatchee. It is such a stunning sunny spot! Snow up high in the mountains, lots of sun and fun places to explore along the mighty Columbia river.

To be honest it was hard to layer here. Mornings were below freezing in the low 30’s but once the sun hit by late morning the upper 40’s & 50’s felt exceptionally warm but when the wind picked up could feel the cold mountain air blowing through the valley!

We stayed and visited a couple WA State Parks!
Highlights include:
-Wenatchee Confluence State Park- that has an amazing walking/bike/run trail that is over 10miles long called the Apple Capital Connection loop that winds along the Columbia River, through many parks, wildlife areas and in through town!
-Pybus Market-this was historically a steel mill than has been transferred into a public market with many wonderful local vendors, brewery, meat/seafood market, fresh coffee and lots of sunny outdoor seating
-Lincoln Rock Park-In 1898, Charles H. Schoff took a photo of the rock from the deck of the Echo, a Columbia River steamboat that ran between Wenatchee and Orondo, on which he served as an engineer. Ed Ferguson, a deckhand on the boat, was reading a biography of Abraham Lincoln, and remarked that the face in the rock resembled the late president. Over time, the feature became known to crew members and passengers as Lincoln Rock.

Invested 5 seasons there on Ski Patrol in between many military deployments. Love the mountain, love the people and family friendly vibes at this place. The Paradise Basin area is an absolute powder playground!

It was military appreciation day and they were also celebrating 80th Anniversary of 10th Mountain Division storming Riva Ridge in the Apennine Mountains in Italy during WWII. There is a lot of connection between the military, ski patrol, and ski areas here in the US. There are close to 60+ ski areas in the US that were started by WWII Veterans, many of them from the 10th Mountain Division! 🇺🇸
